Okonomiyaki, Hiroshima style

The first stop of my three-month trip in Asia was Japan. Japan is an incredible country, with lovely people, history, and amazing food. It is one of the more technologically advanced countries in the world; and also a country where the thousands of years of traditions still live and passed on from generation to generation; and for that it is unique.

So my first night in Japan was in Hiroshima. After I paid my respect to the thoPicture 048usands of people died Hiroshima during WWII, I had to try the Okonomiyaki. There are two cities that are famous with their Okonomiyaki’s. Hiroshima and Osaka. From asking around and my book, I went to a restaurant that only serves the signature dish at all of its 5 floors. There are different sitting areas that people come as a group or by themselves and mostly sit around the counter, drink fresh beer and eat okonomiyaki and have a good time.

Okonomiyaki is a savory Japanese pancake that is made with a special batter and contains shredded cabbage, other shredded vegetables, noodles, fried egg and other types of meats and seafood like bacon, shrimp etc. The best part of it is you can make any way you want, and what you put in it varies according to what you like, or what you have. I don’t eat red meat so I had mine made with shrimp only and it was so tasty. Basically, two large Picture 049and thin pancakes, one on the top and one on the bottom have all the veggies, meats and egg in the middle. They also serve it with kewpie mayonnaise, Katsuobushi (dried, fermented and smoked tuna flakes) and okonomi sauce which is like the Worcestershire sauce but sweeter.
